Francesinha Sandwich

A bowl of soup with a piece of food in it

For the sauce:
3 tablespoons lard (or oil)
3 tablespoons chopped chorizo
5 garlic cloves, minced
1 onion, minced
¼ cup tomato paste
¼ cup paprika paste (bell pepper paste)
1/3 cup chili paste (piri piri)
White pepper
Salt
1 bay leaf
⅓ c brandy
½ cup port wine
⅔ cup red wine
¾ cup white wine
1 ¼ cups beer
1 quart meat stock (preferable pork stock)
1 bay leaf
1 teaspoon cornstarch
Salt
White pepper

For the sandwich (note these are the ingredients for 1 sandwich, just up the amounts for more sandwiches):1 ½ tablespoons butter
2 slices bread
2 slices spicy cooked fresh chorizo
5 ounce piece cooked steak (such as filet mignon)
2 thin slices cured chorizo
2 slices smoked ham
1 large egg
Oil for frying the egg
Salt and white pepper
6 slices Provolone, Havarti or Swiss cheese

Make the sauce:
In a saucepan cook the chorizo, garlic and onion in the lard over medium low heat, until softened. Add the tomato paste, paprika paste and piri piri and cook, stirring occasionally, over low heat for 5 minutes. Add the brandy and simmer for several minutes to burn off the raw alcohol taste. Add the port and simmer for a few more minutes. Add the red wine, white wine and beer and simmer 5 minutes. Add the stock and bay leaf and simmer until reduced to about 1 1/2 cups and thickened. In a small bowl whisk together the cornstarch and ¼ cup water. Add to the sauce and bring to a simmer. Turn off and season with salt and pepper to taste.

Make the sandwich:
Preheat oven to 250 F.  Preheat the grill or a grill pan. Rub the butter on the bread and grill each slice of bread on one side.

Arrange a slice of the grilled bread, grilled side down on the counter. Top it with the spicy sausage, the steak, the sliced chorizo and the ham. Arrange the second piece of bread, grilled side up, on top of the ham. Put the sandwich on the grill, put a weight on top and grill for several minutes. Remove and trim all four edges.

In a small skillet over medium high heat fry the egg in the oil, seasoning with salt and pepper. Place the fried egg on top of the sandwich.

Place the sandwich in a small casserole dish, cover it with the cheese slices, and transfer to the oven. Bake for 3 minutes or until the cheese is nicely melted.  Transfer the sandwich to a plate and top with some of the sauce.
