
In Cancale, a charming seaside town near St. Malo, I got to taste two of the local oysters at the oyster market. The flat oysters in the photo are called Cancale flats (I know them as Belon) and the other oysters are called Pacific oysters. The woman who sold them to us after she spent all of 1 minute opening a dozen, told me that I must eat the Pacific oysters with a squeeze of lemon and the Cancale flats with nothing on them (where is the mignonette I wondered?) and they were briny and fat and outrageously tasty! My Dad, an oyster lover, was smiling in heaven I am sure. Oh, and we ate the oysters with the local wine, Muscadet, and French bread, lathered with local butter.
