Picadillo Sloppy Joes
Total preparation time: 30 minutes
Makes 4 servings (3 ½ cups filling)

1 medium onion
2 tablespoons extra virgin olive oil
1 tablespoon minced garlic
1 pound ground chuck, round, or sirloin
One 4½-ounce can chopped green chiles
½ cup pimiento-stuffed green olives
1-cup chili sauce (like Heinz – this is more of a ketchup sauce than a chili sauce)
¼ cup Amazin’ Sunsweet Diced Prunes or 4 pitted prunes finely chopped
Kosher salt and freshly ground black pepper
1 to 2 tablespoons fresh lemon or lime juice
Hot Sauce

Finely chop the onions (about 1 cup). Heat the olive oil in a large skillet over medium heat until hot. Reduce the heat to medium low; add the onion and cook for 5 minutes, or until it has softened. Add the garlic and cook for 1 minute more.

Turn the heat up to medium-high. Add the ground chuck and cook, stirring and breaking up the lumps, for about 5 minutes, or until it is no longer pink.

Drain the chiles; finely chop the olives (about ¾ cup). Add 1 cup water, the chili sauce, chiles, olives, prunes, 1 teaspoon salt, and ¼ teaspoon pepper to the skillet; simmer for 10 minutes, or until most of the liquid has evaporated. Stir in the lemon juice, hot sauce to taste and salt and pepper to taste. Divide the mixture among the buns and serve

      They are all on the website. Just find the looking glass icon at the far right in the grey bar and click on it. Then type in the name of the recipe or main ingredient and the recipe will pop up.

    Wonderful, second day. First day, just okay. Topped my sandwich with bread and butter pickles or cherry peppers.
    I added 2 large handfuls of raisins for sweetness and bit of tang. You could add a spoonful of brown sugar but raisins are just as sweet and much healthier.
    Will make again and freeze.
