    We didnt used to be able to eat pork pink. Now we can. So why can we eat duck medium rare and have to cook chicken all the way?

      It has to do with how they are raised and how they are slaughtered. Ducks are not as susceptible to salmonella and they are not jammed into cages where a disease can spread easily.
