For the Honey-Lime Dressing:
1/4 cup fresh lime juice
1/4 cup olive oil
dash of hot sauce
For the salad:
¼ cup black beans (rinsed and drained)
¼ cup corn kernels
¼ cup guacamole
¼ cup chopped tomato
¼ cup shredded chicken
¼ cup shredded romaine
½ cup tortilla chips
In the bottom of a clean mason jar, with a whisk, mix lime juice and olive oil. Add the honey and a dash of hot sauce and whisk again.
Assemble salad ingredients on top of the dressing, starting with the black beans, then corn, guacamole, tomato, chicken and romaine.
Place the tortilla chips in a resealable plastic bag and crush with a rolling pin.
Take an clean, empty applesauce container (the kind used for individual servings) and fill with the chips.
Cover it with the metal lid from the mason jar, invert it onto the mason jar, and screw the ring on top to secure it. The chips stay dry and crispy until you are ready to eat.
