Ingredients
2 large firm pears
2 tablespoons finely diced onion or shallot
2 tablespoons finely chopped cornichons
1 small chile minced
the finely chopped zest and juice of 1 lime
extra virgin olive oil to taste
salt and pepper to taste
Directions
Mix all the ingredients well in a medium bowl and let stand for 1 hour before serving.
