Gambas Al Ajillo (Garlic Shrimp)

Servings: 4
Note: we made a half batch on the show

1/2 cup extra virgin olive oil
4 to 6 large cloves garlic, thinly sliced
Pinch red pepper flakes
1 pound medium raw shrimp, peeled and deveined
1/2 teaspoon salt
1/2 cup cava or other sparkling white wine
Chopped flat leaf parsley for garnish
Crusty bread for dipping

In a large saute pan combine the oil and the garlic and turn the heat to medium. Cook, stirring often, until the slices begin to gently brown. Add the shrimp, season with salt and cook until the meat is just firm, about 2 minutes, depending on the size of your shrimp.

Add the cava and cook for another minute as the alcohol burns off. Remove from heat and garnish with the parsley. Spoon onto plates and serve with the bread.
