Chinese immigrants were the backbone of Vancouver where I take a culinary tour of its Chinatown. At a local tea shop, I learn to make two deceptively simple appetizers cooked with tea: Smoked Tofu Topped with Wakame Salad and Colorful Yunnan Tea Eggs. I sample Dim Sum at a shop owned by an opera singing second generation Chinese local. Then a Chinatown historian shows me a Chinese dumpling mashup Bulgogi Dumplings. Back home, I race the clock to prove I can make my version of Chinese takeout faster than it can be delivered from a restaurant. Will my Baby Egg Rolls with Soy dipping sauce win the race?
