It is called Bomba, literally “the bomb.” I ate it at a hole in the wall place in Barcelona, called La Cava Fumada. The Bomba is made of highly seasoned mashed potatoes mixed with some ground pork, shaped into patties, coated with bread crumbs, fried and topped with an extremely garlicky aioli (just mashed garlic and oil- no kissing after eating this tapa) and a dusting of chili powder. Wow!!!!!!!
The grilled sardines, grilled whole baby squid and house made chorizo are excellent too. Here is their menu.

I loved this episode because I have been to Barcelona. I would like to know the name of the woman who was Sara’s host at La Cava Fumada. I saw the program this morning, but it isn’t being repeated here in the next few weeks.
My tour guide was Paula Mourenza. She works for an excellent company called “Culinary Backstreets.” Here is a link for more info: https://culinarybackstreets.com/food-tours/barcelona
