Fried Plantains (Tostones)

1 to 2 large green plantains
5 tablespoons canola or other vegetable oil or enough to reach ¼ -inch up the side of a large skillet
Kosher salt

Peel the plantain and slice it on the diagonal ½ – 1-inch thick.

Heat the oil in a large skillet over high heat. Add the slices and fry about 3 minutes per side.

Remove the plantains from the pan and flatten the slices by placing a plate over the fried slice and pressing down.

Return them to the hot oil and fry 1 minute on each side until golden brown. Remove from the pan, drain and salt to taste while still hot. Serve immediately.

    I watch this show on PBS and love it I love cooking and trying new recipes I will let you how it turns out
