When I was grating my beets for a quick saute for The Husband I happened to taste a little bit of the shredded beets in the raw state
and discovered that they had a very fresh, mild beet flavor with a lovely crunch.
Beets are the new cole slaw!!
Because I’d shredded two different colors I had a few styling choices . Either “arranged” in a pattern, or tossed.
All I needed to add was some balsamic vinegar, excellent olive oil and s and p.
What constitutes the “gold” part of the salad/slau?
Shredded gold beets. They actually come in that color.
I love them with rice vinager olive oil and a lite bit of orange juice.

Hi Sara, when the children were growing up, I used to throw grated beet and carrots on our salads. Just extra good stuff.
