The focus is on foods of Latin America, but with a twist. I go to Charlotte, North Carolina to join a viewer with a unique version of  tamales – this one is for dessert. Then I join a Miami food blogger with her own take on traditional Vaca Frita. This one’s with chicken and is served in a taco.

My Guest Patty Ruiz is a Miami based food blogger and educator, best known for her blog “The Mad Table. Her recipes feature fresh ingredients from her South Florida home and different takes on the Cuban food she ate growing up.

Chef Patty Ruiz’s mission is to inspire people to discover and enjoy the importance of food as a social medium. Her passion for food, entertaining and food styling has been recognized throughout the industry. As founder of her company, The Mad Table, Chef Patty provides private and group classes, hosts interactive dinners, and provides private chef services. She also enjoys working on styling projects helping food bloggers and influencers make their food images pop on their websites and social media accounts. This experience has led to professional food and prop styling work for commercials, print media, film, and restaurants. This behind the scenes part of her job is one of her favorites! This is where she gets to combine her talents and creative eye to every aspect of food styling and entertaining, from creating props to producing a story to developing recipes.

The Mad Table brand wears multiple hats centered around the same passion, food!

  • The Mad Table Kids Culinary Camp
    It is a small boutique style kids culinary camp in the summers only. She takes up to 10 kids under her wing and exposes them to kitchen safety + sanitation rules, knife skills, basic techniques, cutting methods, how to measure ingredients, proper usage of kitchen tools and equipment, and following recipes. In her class they work as a group and is all hands-on. They make 3-4 recipes per day and at the end of the day, they all sit at the dining room table together for lunch and enjoy the fruits of their labor!
  • The Mad Table Blends
    We make small batch hand crafted spice and sugar blends (she started making these blends for her private chef clients just to elevate the flavors of the dishes she was creating for them and it quickly grew into a business of its’ own!). You can now find her blends on her Etsy Shop, themadtable.
  • The Mad Table Styles
    She started by playing around with her own food by using color, shape and texture to create an artistic plate. She took on a few food styling projects working with bloggers that needed help making their food images pop for their websites and social media accounts and that eventually led her to more professional food and prop styling work for commercial + editorial, film, and some restaurants. This behind the scenes part of her job is one of her favorites! This is where she gets to combine her talents and creative eye to every aspect of food styling and entertaining, from creating props to producing a story to developing recipes.
