I am a big fan of the savory pie, I think it is a perfectly delightful option for a weeknight meal. So today I am going to tackle two very different options. First up, broccoli calzone, a quick homemade pizza dough (how quick? You can prepare it in just 6 minutes) rolled out using my secret method that I learned from a Sicilian girlfriend, stuffed with broccoli and herb cheese, then baked.
Then I am on to a twist on an old classic sandwich combo, putting bacon, lettuce and tomato into a pie crust with eggs, and yes, a little mayo and topping it with lettuce.
What a nice departure from the usual dinner line up.
