Being able to prepare a whole meal in one pan makes for a no stress, no mess menu. Today I am starting with my Sunny Summer Squash Soup that is garnished with crispy breaded zucchini rounds. I am serving it with a tomato and frisee salad. Then it’s on to Pearl Couscous with Shellfish Stew, a hearty pasta dish topped with scallops, shirmp, clams and mussels. All this stew needs to round it out is an arugula salad with croutons, Spnaish olives and my favorite creamy garlic dressing.
What’s faster and easier than cooking a meal in one pan? Now there’s a meal that the dishwashers in the family will especially appreciate!
