If you get in the habit of making a little extra every night when you cook dinner you will find that after a few days you have the makings for a new meal, or part of a meal. My mom used to make extra mashed potatoes and then turn them into mashed potato cakes or spread them as the top “crust” of some stew (sort of a shepherd’s pie). Unused cooked rice can be respositioned as fried rice and leftover cooked meat can go into soups, enchiladas, or bbq sandwiches.
Here I am taking advantage of extra roast chicken to prepare a Mexican flavored tomato soup and surplus spaghetti to make a baked Italian omelet.
