Nothing says Brittany more than crepes and, on this episode, I am learning from a master, an American expat, Mary Margaret Chappell who shows me how anyone can make a Savory Buckwheat Galette filled with Scallops and Leeks. That’s after I source the world’s best butter, sit seaside to slurp fresh oysters and trek the countryside to forage for greens. Back in my kitchen, another Francophile weeknight meal: Salad Lyonnais with Smoked Salmon. French coastal cooking with practical tips for home cooks.

Mary Margaret Chappell
Mary Margaret fell in love with food –and France – while she was on a student exchange in high school. The bread! The butter! The cheese! The pastries! She still has the journals where she meticulously noted each and every thing she tasted on that trip. Small wonder then that she spent her time as a French/English major in college scheming for a way to get back to France to study cooking. After a year as an English assistante in a cooking school (where she specialized in pastry), she followed her French boyfriend to Brittany. The romance with the Frenchman didn’t last, but the love affair with food and Brittany did, and she stayed on, teaching English and apprenticing at a boulangerie/pâtisserie. (Good times!) Even when she went to New York to pursue a career in cooking, first in pastry kitchens at restaurants around the city, then as a food editor for national magazines, her ties to Brittany remained strong and in 2007, she moved back to Brittany for good. Ever since, she’s been cooking, writing, and teaching cooking classes in her sunny kitchen on the Port of Cancale, where she has a view of the sea and a steady supply of delicious, local ingredients… not to mention the tasty things she finds on her foraging outings along the coastal paths near the town!
