Episode 1202: Vegetariano Italiano

My guest, Cristina Bowerman, broke through the boys club to become the only Michelin starred female chef in Rome.   We go on a delicious journey through Cristina’s Trastevere neighborhood to pick up ingredients for Cristina’s meatless Celeriac and Orange Pizza topped with a seccret ingredient and herb oil.  It’s easy, it’s smoky delicious and its like no pizza you’ve ever had before.  In my own kitchen, I continue the vegetarian Italian theme with a Spaghetti Squash  pasta with nuts and a creamy goat cheese sauce.  Plus, an American in Rome, Kristina Gill, living the dream as a food photographer.

Kristina Gill

Kristina Gill is from Nashville, Tennessee. She co-authored and photographed the book “Tasting Rome” from Clarkson Potter Publishers. Kristina moved to Rome at the turn of the century, and currently works as a humanitarian advisor. She is married to Niccolò and in love with her dog, Jasper.

Kristina took us to the Testaccio Market (Nuovo Mercato Comunale di Testaccio) in the old meatpacking district.   Chefs and vendors in the area are reviving offal dishes, traditionally less expensive food made with meatpacking byproducts, with new preparations.
