Episode 1301: A Taste of Tunisia and Turkey

“Sara’s Weeknight Meals” hits three continents in one show, starting with Africa, where I start a food tour of Tunisia’s Sidi Bou Said at a  tea house with chef and food historian, Malek Labidi.  After tasting the local version of donuts, we retreat to a garden overlooking the Mediterranean to make a killer Shakshuka, eggs poached in spicy red sauce.   Later we dive into the market in Tunis to learn about spicy Harissa (the ketchup of Tunisia), floral water, and couscous. Then its off to Europe and Asia and specifically Istanbul, Turkey, which straddles both continents.  Finally, I take a shopping trip with local TV chef Refika Burgul, followed by a lesson in making Salt Cured Bluefish fresh from the Bosporus, Walnut Poppyseed Bread,plus the addictive Turkish beef and French fry favorite,  Cokertme Kebabi.

Malek Labidi is a Tunisian chef who honed her love for food at Institut Paul Bocuse in Lyon in France, and returned home with a strong desire to bring Tunisian food to the world with contemporary flavors. Lamia Temimi, was our guide for the tour of the Tunisian market. Born in Tunisia to an Algerian father and Sicilian mother, Lamia embodies the convergence of Mediterranean cultures in Tunisia. After twenty years spent traveling the world working in the high-end hotel industry, she now runs a bed and breakfast on a farm in the heart of the Nabeul countryside, a quarter of an hour from the beaches of the Cap Bon, while also working as a sustainable tourism consultant. She is fluent in Arabic, French, English and Italian.
