Frozen Café au Lait

This is my homemade version of the frozen coffee drinks that have become hugely popular at the gourmet coffee franchises in the last few years. As lip-smackingly good as the commercial concoctions, mine is also much lower in calories because it doesn’t use cream or half-and-half and it isn’t loaded with sugar.

This recipe gets its depth of flavor from coffee ice cubes. So from now on, anytime you have leftover coffee, don’t throw it out; make cubes. They are great in good old-fashioned iced coffee, too.

Serves 4
Ingredients
3 cups strong brewed coffee, cooled
1 cup whole milk
3 tablespoons sugar or more to taste 

Pour the coffee into 2 ice cube trays. Freeze until solid, at least 4 hours. Working in 2 batches, blend the ice cubes, milk, and sugar in a food processor or blender until the consistency is smooth and even, about 1 minute. Pour into chilled glasses and serve at once.
