There is nothing better on a snowy day than a homemade slow cooked meal. But a homemade slow cooked meal is possible on any day you have a little more time, like most weekends. The added benefit is this kind of meal is a huge pick me up on a Sunday night when perhaps there is a tiny bit of dread about the impending school/work week. And if you make extra you can reposition the ingredients into an altogether different dish during the week, on a night when you are pressed for time. I am going to prepare an old fashioned braised brisket with fying disks (flattened matzo balls) and a roast chicken with zucchini and cheese stuffed under the skin. You can use the leftover brisket in tortillas, or add it to soup, or turn it into a bbq beef sandwich later on in the week. If there are any leftover disks, coat them in bread crumbs and saute them in a skillet until they are gold brown. As for the chicken, add broth, noodles and leftover vegetables for a tasty hearty soup.
