When it is 80 plus degrees out and it’s time to make dinner, you just don’t want to turn on that oven. Well I have two no bake recipes for you to put together on one of those steamy nights, recipes that are still perfect for a weeknight meal even without a lot of cooking. First I’ll be making Asian Chicken Salad with Carrot Ginger Sauce that takes advantage of one of my all time favorite cheating ingredients – the rotisserie chicken. Its packed with vegetables so its a meal in itself. Then I whip up a summer cocktail, a Watermelon Screwdriver, and the secret ingredient is a simple ice cube. Finally I grill some large pieces of bread and top them off with a delicious tuna topping with a chef buddy of mine, Giuseppe Fanelli.
