Mathew’s Sushi Burger

Serves 4

Rough note for inspiration:

Matthew took the liberty of coming up with a Sushi Burger, using the the same rice as we did – with the vinegar seasoning and used the same toppings Billy and I used in the sushi rolls. That said, his creative use of creating these rice “hamburger” style buns could be filled with countless possibilities!

Hands-On Time: 20 minutes
Total Preparation Time: 40 minutes

2 cups cooked Calrose Rice, medium grain
Cooking Spray

Assorted sushi toppings:
wasabi, nori
sliced avocado
sliced cucumber
sesame seeds

Prepare the rice in a rice cooker. Let cool. Spritz a 1 cup glass measuring up with a little cooking spray. Fill with about ½ a cup of cooked rice. Use a small square of waxed paper to press the rice down firmly. Take a small rubber spatula and gently loosen the edges of the rice. Spray with a little more cooking spray place the rice bun in a non-stick or stick resistent skillet over medium high heat, for about 8 mintues a side, until the rice is slightly browned on both sides.

Build your burger. Spread some wasabi on the bottom of the bun. Add some sliced avocado, a square of nori, then the cucumber. Place second rice bun on top and sprinkle with sesame seeds.

This would be a great way to repurpose all kinds of leftovers.

I just watched episode 808 & will definitely be trying these recipes!
Can you tell me what was in the dipping sauce that was used while everyone was eating?

    Thank You!

      Paulette,
Unfortunately I don’t remember exactly but my guess would be soy sauce, sesame oil and perhaps some rice vinegar.
