When I was first on my own in a house with friends in college, I mostly cooked vegetarian because I couldn’t afford meat. I was not unhappy. As the years passed I started cooking at home the way my mom did, meat/starch/potatoes for every meal. I thought that was what the family needed (and I wanted to avoid criticism from the meathead husband). But now I’ve come full circle and find myself not only bulking up the vegetable category on the dinner plate, but also sometimes nudging the animal protein off the plate.
