It wasn’t so long ago that the food police declared that carbohydrates were the devil. All too many people went along with the decree, sheepishly purging bread, potatoes and pasta from their kitchens. Horrified, some of us fought back, saying, “Wait! You can’t throw out all carbs! And stood up for whole grains, including slices of whole wheat white bread, which allow you to have your white bread and eat it, too. But really, you can put any number of healthy foods between two slices of bread, no matter what kind of bread it is. So why throw out the baby with the bathwater?
