Homemade Gingerale

Makes 4 drinks

¼ cup sliced unpeeled rinsed fresh gingerroot
2/3 cup water
1/3 cup granulated sugar
4 cups soda stream seltzer, well chilled

1. Combine the ginger, water and sugar in a small saucepan.
2. Bring to a boil and simmer gently for 10 minutes.
3. Let cool then strain and discard the ginger.
4. In a rock glass combine 3 tablespoons ginger syrup and 1 cup seltzer.
5. Top with ice cubes.

You should wash pre-washed lettuce. That is the current wisdom. I know it is a pain in the butt, but do it anyway. sorry!
